  • Add 1 more egg into the batter if it’s too dry. If it’s too wet, add 1-2Tbsp flour (the consistency of the batter depends significantly on mashed potatoes; it should be rather thick).
  • Use room-temperature mashed potatoes for this recipe. Thanks to this, the structure of the batter will be more stable and firm. Also, if you add eggs to hot potatoes, they will start to cook.
  • Prepare the waffle iron: grease it with a small amount of fat and preheat it well before to prevent sticking.
  • Avoid lifting up the iron too soon – in this case, the batter may separate and stick to the top and bottom of the iron.
  • The cooking time will vary depending on your waffle maker. Usually, it takes 4-5 minutes.

  • 100g (1cup) shredded ham
  • 140g (1½ cup) shredded cheese (cheddar cheese is great for this recipe)
  • 80g (½cup) all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • ⅓ tsp salt
  • ground black pepper and ground dry paprika

How to make potato waffles

Grate the ham and cheese on a medium grater

Boil the potatoes, mash them, and let them cool. Add the eggs (whisk them with a fork), shredded cheese, ham, and chopped chives to the potatoes

Mix. Add the flour, baking powder, baking soda, salt, and spices

Mix everything well again. If the batter is too wet, add another 2-3 tablespoons of flour (the mixture should be rather thick). Grease the iron with some oil, preheat it well, and cook the mashed potato waffles for 4-5 minutes
