These days (okay, in the previous days, too), the sun apparently hovered over Rome and gives all its heat to the Eternal City. The best way to escape from the heat? Go to the sea, of course! That’s what we’re doing. We take beach chairs, our favorite red umbrella, toys for children, towels, books and, of course, a bag with food. You can’t do without it, especially with children, who, after swimming and jumping in the company of sea waves, have the ability to develop an extraordinary appetite.

So on Saturday, we went to the sea armed with our “tasty” bag full of ham and cheese sandwiches, diced melon, Italian pasta salad, and homemade biscuits.

Mediterranean summer salad and love at first sight …

You know, I always behave well-mannered on the beach, I don’t run into the sea at the speed of a Japanese train, splashing water on people around me, I don’t shake a towel full of sand, which creates a sandy wind, like in the Sahara, I don’t block the sun to anyone and I don’t look at what people eat on the beach at lunchtime. But on Saturday, I wasn’t me… I came out happy and quite hungry from the water and on the way to our beach chairs my gaze involuntarily fell on the table under a huge green umbrella (yes… some people take folding tables to the beach with them…), a tanned, middle-aged Italian woman was “running” around this table, taking out cups, plates, plastic salad bowls with various dining goodies from her bags.

I don’t know the whole menu, because I only looked at It… and It was looking at me… no, don’t think anything like that… I’m talking about the watermelon feta balsamic salad now! So bright, fresh, and attractive that my eyes stubbornly focused on it, and the “new delicious idea” mode turned on in my head (this is my mode of quickly recognizing and remembering all the ingredients haha).

I remembered something, added something to my taste, poured this miracle with my favorite balsamic vinegar, sprinkled everything with salted peanuts for perfection, and I will say without a doubt, it turned out so delicious and bright that if Neptune saw my Mediterranean summer salad with watermelon and feta, he would, without thinking twice, leave all the mermaids and ran to the beach to eat this yummy!

Watermelon feta balsamic salad – the summer on the plate!

Why didn’t I think of the watermelon, arugula, feta, and olives combination earlier? Watermelon (as it turns out), adapts so wonderfully to savory dishes! Well, watermelon soup or watermelon with meat, of course, are not from this poem, but a savory watermelon salad is just a wonderful miracle! If you haven’t discovered such a combination yet, be sure to try this Mediterranean summer salad, you won’t regret it. And if you have already prepared this type of salad, make it again! Ingredients for Mediterranean summer salad:

If you are a happy digital kitchen scale owner, I highly recommend using it instead of cups and spoons. Especially when it comes to baking recipes. A scale gives you far more accurate results than volume measurements (everyone scoops ingredients differently). Trust me, using a kitchen scale to measure ingredients will take your baking to a new level.

(The number of ingredients in this recipe is arbitrary, I add everything in the same amount)

  • arugula
  • black olives
  • feta
  • watermelon
  • salted peanuts
  • olive oil
  • salt pepper
  • dry ground smoked paprika (regular is also suitable)
  • balsamic vinegar

Recipe for watermelon feta balsamic salad

Place arugula on the bottom of a flat plate

Add feta cheese (cut into medium cubes) to the arugula

Now add olives

And watermelon (cut into medium cubes). Don’t be lazy to remove the seeds from it

Sprinkle the salad with salted peanuts. Season with salt and pepper, add a pinch of dry paprika. Drizzle with oil and balsamic vinegar – a light, bright, appetizing, intriguing Mediterranean summer salad is ready. Bon Appetit!

  • 4 oz (100g) arugula
  • 4 oz (100g) black olives
  • 4 oz (100g) feta
  • 4 oz (100g) watermelon
  • 4 oz (100g) salted peanuts
  • olive oil
  • salt pepper
